Hi, I’m Jessica — Registered Dietitian, nutrition counselor, and your partner in feeling better.
As a dietitian helping people navigate food, cooking and digestive health in the OKC metro, I support clients in calming their gut, understanding their bodies, and building eating rhythms that actually fit their real lives. My work blends evidence‑based nutrition therapy with hands‑on cooking support, because healing isn’t just about what you know — it’s about what you can do in your own kitchen, on your busiest days, with the body you have right now.
I grew up in Oklahoma, in a family where food was connection, comfort, and creativity. That early love of the kitchen eventually led me into professional cooking — and later into nutrition — where I learned how powerful food can be for both joy and healing.

My Philosophy
Food is personal. Your gut is personal. Your health is personal.
So your care should be too.
I don’t hand out rigid meal plans or tell you to “just avoid stress.” We work to understand what’s happening in your body — the physiology, the patterns, the why — and then we build a plan that feels doable and supportive.
I believe in:
- Science that makes sense
- Skills that translate to real life
- Cooking as therapy, not performance
- Nutrition that respects your lived experience
- Healing that doesn’t require perfection
Your body isn’t a problem to solve. It’s a story to understand.
Why I Do This Work
For years, I’ve watched people get lost in the overwhelm of GI symptoms, uncontrolled blood sugar, conflicting advice, and diet‑culture pressure. GLP‑1 users often arrive exhausted from navigating nausea, fullness, constipation, and the constant fear that they’re “doing it wrong.” And so many folks try to cook for their health only to end up feeling defeated, confused, or ashamed when their body doesn’t respond the way they hoped.
I built The Skillful Spoon to be the opposite of all that.
You deserve room to breathe again. Your symptoms start to make sense instead of feeling random or overwhelming. Food begins to feel supportive rather than stressful. And you get space to learn, experiment, and rebuild confidence — one meal, one rhythm, one small shift at a time.

My Background
I cooked professionally in a variety of kitchens. Then got my Masters in Nutrition at OU Health Sciences Center and went on to clinical work at Mercy Hospital OKC as a RDN, LD. My clinical experience led me to become a dietitian who helps people navigate food, cooking and digestive health in OKC, focusing on the practical skills that help a body heal and stay steady in real life.
My approach is collaborative, compassionate, and deeply practical.
Together we:
- Review your symptoms, patterns, and history
- Build a nutrition plan that supports your gut and your goals
- Create meals that feel good in your body
- Practice skills in your kitchen if hands‑on learning helps you thrive
- Make changes that feel sustainable — not punishing
This is nutrition counseling that respects your whole life, not just your lab results.
If you’re ready to feel better in your body, I’m here.
Let’s talk about what’s going on, what you’ve tried, and what you need next.
